I first learned about banh xeo, cooked by my mother's hand, since I was in kindergarten. In addition to housework, my mother sells pancakes for breakfast in the morning. The shop is simple with only a long wooden table. Mom made and sold cakes herself on that table. Diners sit around the table. Before the day of sale, in the afternoon, the mother has to soak the rice and then grind it into a water powder. Mom also turned fat into water to prepare. Early in the morning, when I was still sleepy, my mother worked alone to arrange the tables and chairs and began to make pancakes. Funny pancakes pan. The small round mold is about the size of an outstretched hand with a raised handle. Baking materials include squid, shrimp, meat, onions, bean sprouts and cake flour. Mom cut a banana branch and took a piece to put oil on the pan. Stir-fry until squid, shrimp, and meat are cooked, mother coated a spoonful of flour on the pan. Then, put the rack in, close the lid. On high heat for about three minutes, Mom opened the lid and doubled the cake.
